Deviled eggs are always a party favorite

Cajun-Style Zydeco Ya Ya Deviled Eggs

Ingredients

6 large eggs, hard-boiled and peeled
1/4 cup mayonnaise
1 tablespoon Dijon mustard
1 teaspoon hot sauce (such as Tabasco)
1/2 teaspoon paprika      
1/4 teaspoon cayenne pepper
Salt and pepper, to taste
1/4 cup chopped fresh chives or scallions
1/4 cup crumbled feta cheese (optional)
1/4 cup chopped pecans or pistachios (optional)

Instructions

1. Cut the eggs in half lengthwise and carefully remove the yolks from each egg. Place the yolks in a bowl and set the egg whites aside.
2. Mash the yolks with a fork until they are well broken up.
3. In a separate bowl, mix together the mayonnaise, mustard, hot sauce, paprika, cayenne pepper, salt, and pepper.
4. Add the mayonnaise mixture to the bowl with the mashed yolks and stir until well combined.
5. Scoop the yolk mixture into a piping bag or a zip-top plastic bag with a corner cut off.
6. Pipe the yolk mixture into the hollowed-out egg whites. You can be creative with the piping by making swirls or peaks.
7. Sprinkle the chopped chives or scallions over the deviled eggs. If using, sprinkle the crumbled feta cheese and chopped pecans or pistachios on top of the eggs as well.
8. Refrigerate the deviled eggs for at least 30 minutes before serving.
9. When ready to serve, garnish with additional chives or scallions if desired, and serve chilled.
