What sort of cultural recipes are beloved to you?
The Question
I am asking because usually, when I find a new recipe, I have a reason to pick it. Often its because folks come out the in the comments talking how as kids they loved it, etc.
As an example I include [Macarona Bil Laban](https://www.seriouseats.com/macarona-bil-laban-pasta-with-yogurt-recipe-11762247). This recipe is outside my culture, but seems to be beloved, and I tried it and it is awesome!
Recommend some more awesome cultural staples please!

Best Method
No cooking methods are provided in this discussion, as responses focus entirely on recipe recommendations rather than preparation techniques. The community mentioned recipe sources including Serious Eats and Omnivore's Cookbook for scallion pancakes and The Food Lab for cassoulet, but did not share cooking procedures.
Alternative Approaches
The discussion highlights specific cultural traditions and recipe sources:
- Chinese cuisine: Scallion pancakes from Omnivore's Cookbook (preferred over Serious Eats' Kenji Lopez-Alt version by one cook)
- French cuisine: Cassoulet from The Food Lab cookbook, described as "high effort but truly superb"
- Ashkenazi Jewish cuisine: Four core dishes - matzo ball soup, chopped liver, kugel, and oven-braised brisket
- Traditional French cassoulet: Referenced in chef's journal "French Leave" as an intensive traditional process
Where Cooks Disagree
One clear disagreement emerges regarding scallion pancake recipes: one experienced cook specifically preferred the Omnivore's Cookbook version over Kenji Lopez-Alt's Serious Eats recipe, though no reasoning was provided for this preference.
